Aubergine Spread/Dip
Serves: A large bowl
Time: 45-50 minutes
One of my absolute favourite ways to spice up a sandwich is with this aubergine spread. Think of hummus… it’s very much like aubergine meets hummus! I served this before with family where we dipped bread in, and other times I’ve had it spread in a sandwich, it’s delicious either way!
Ingredients:
2 aubergines
1 tablespoon of date syrup
2 tablespoons of tahini
1 garlic glove
1 teaspoon of smoked paprika
1 teaspoon of cumin
1 tablespoon of olive oil
Pinch of salt
Cooking Steps:
Set your oven to 180C.
Slice your two aubergines in half lengthways, and place on a baking tray. Drizzle with a small amount of olive oil and sprinkle with salt. Cook for around 35 minutes, until soft.
While these are cooking, prepare your other ingredients and put them into a food processor.
Once the aubergines are cooked and cooled, spoon out the flesh of the aubergines from the skins and place them into the food processor alongside the other ingredients.
Pulse in the food processor until smooth. Sprinkle with some smoked paprika before serving (optional).
