Healthy ‘Add what you want’ Oat Cookies

Time: 30 minutes 

I’ve been making a variation of these cookies for weeks now – they’re super easy to make using only a few ingredients, and they’re really healthy so make the perfect snack. What I love most about them is that you can really add anything you want into the mix in terms of cookie additions – I’ve made them with raisins and pecans, or chocolate chips and walnuts (pictured), or cranberries and almonds. I also love to add chia seeds into the mix for extra health! If you love a soft moist cookie – you’ll love these!

Ingredients: 

 

  • 3 large ripe bananas 

  • 60ml (1/4 cup) of almond milk 

  • ½ teaspoon of cinnamon 

  • 32g (1/4 cup) milled flaxseed 

  • 170g almond flour 

  • ½ tablespoon of baking powder 

  • 85g (2/3 cup) of gluten-free oats 

  • As many chopped walnuts as you want  

  • As many chocolate chips as you want 

 

Cooking Steps: 

 

  1. Pre-heat the oven to 180C. 

  2. Mash the bananas in a mixing bowl using a fork. 

  3. Add in the almond milk. 

  4. Then add the dry ingredients and mix in. Lastly, add the chopped walnuts and chocolate and mix those in. 

  5. Scoop out the cookies to be whatever size you want them to be – flatten slightly and shape into a cookie. 

  6. Bake in the oven for around 21-23 minutes. 

  7. Leave to cool on a wire rack before eating as they will firm up once out of the oven.
