Tofu Skewers

Serves: 3 (can add more tofu depending on serving needs)

Time: 30 minutes 

I recently made these tofu skewers for a dinner party I was hosting, and they turned out so good! They look like a really impressive dish if you are having guests over, but they are relatively simple to make. For 2/3 of the tofu block I used the marinade that I list the ingredients below for, but to break this up I also coated some of the tofu in a red pepper paste from a jar (any sort of tomato, pepper, or paste of your choice will work here if you choose to do this!)

Ingredients : 

  • 450g extra firm tofu (alter amount depending on how many people)

  • 1 medium/large courgette sliced

  • Jarred pepper/tomato paste for the second tofu marinade

  • Wooden skewers

Ingredients for tofu marinade:

  • 1.5 tablespoons of olive oil

  • 3 tablespoons of tamari

  • 3 tablespoons of maple syrup

  • 1.5 teaspoons of smoked paprika

  • 1/2 teaspoon of garlic powder

  • 1/2 teaspoon of onion granules

Cooking Steps: 

 

  1. Pre-heat your oven to 200C.

  2. Mix all the ingredients for your tofu marinade in a bowl and set aside. Chop your tofu into chunks. Coat most of the tofu in the marinade listed above, and if you choose to use another marinade also, coat about 1/3 of the tofu in that one. (I marinated my tofu over night, but you could also marinade it even 30 mins before)

  3. Place your marinated tofu chunks on a lined baking tray and cook in the oven for approx. 10 mins. Keep your remaining marinade as we will use it again.

  4. While this is cooking, chop your courgette into thin slices.

  5. Remove the tofu from the oven and allow to cool slightly.

  6. Now place one tofu on a skewer, followed by a piece of courgette, and repeat until you have three pieces of tofu and 2 courgettes on each skewer. (I did two tofu with my homemade marinade sauce, and one on each with the red pepper paste.)

  7. Place these on a lined baking tray and stack vertically and horizontally if needed. Use a brush to coat the tofu in some of the remaining marinade.

  8. Place in the oven for approx. 15 minutes, checking on them while they are cooking and turning over if needed.

  9. Remove from the oven when the courgette has softened and the tofu has browned nicely. Use the brush to add any remaining marinade once they are removed from the oven and still hot.

  10. Serve up and enjoy!
