Korean Inspired Noodles

Serves: 2

Time: 15-20 minutes 

These noodles are SO delicious, and have a real kick from the gochujang sauce. They’re a really quick meal, but so packed full of nutrition and flavour. They are ideal for a nourishing and tasty weeknight meal. This sauce will be your new obsession – you’ve been warned!

Ingredients for the sauce: 

  • 1.5 tablespoons of gochujang (1 if you prefer less spicy)

  • 1 tablespoon of brown rice miso paste

  • 2 tablespoons of apple cider vinegar

  • 1 teaspoon of tomato paste

  • 2 tablespoons of maple syrup

  • 1 teaspoon of garlic granules / 2 garlic cloves crushed or chopped finely

  • 1.5 tablespoons black sesame seeds

  • Sprinkle of nori (optional)

  • Teaspoon of sesame oil

Ingredients for rest of recipe: 

  • 280g tofu 

  • Bunch of spring onions 

  • 1 chopped chilli (seeds removed) 

  • Tenderstem broccoli 

  • 1 bell pepper 

  • 200g edamame beans (rinsed and drained if from a can)

  • 1 tablespoon of sesame oil 

  • 2 portions of wholewheat noodles (or noodles of choice) 

  • 1 spoon of kimchi to top it (optional) 

Cooking Steps: 

 

  1. Mix all the ingredients for your sauce in a bowl and set aside.

  2. Chop your tofu into bite sized chunks, and prepare and chop your pepper and tenderstem broccoli.

  3. In a medium pan over a medium heat, add your sesame oil. Once hot, add your chunks of tofu, and ensure not to toss them too much so they can crisp evenly on each side. Turn them over once each side browns.

  4. Meanwhile, add another medium pan over a medium heat. Add a drizzle of oil and add your pepper and broccoli to cook.

  5. While the tofu and veg are cooking, cook your noodles according to the packet instructions (easiest can be in a bowl of boiling water for 5 minutes or so until soft.)

  6. Once the tofu has browned and crisped, add your sauce mix to the pan and turn down the heat. Toss the tofu in the sauce, making sure it is all coated, and the sauce is nice and sticky.

  7. Remove the tofu and your pepper and broccoli from the heat, and drain your noodles.

  8. Place your noodles in a mixing bowl, add your tofu with all of the sauce from the pan, alongside your pepper and broccoli. Also add your edamame at this point.

  9. Mix it all to ensure it is all coated. Add a drizzle of sesame oil if you like at this stage.

  10. Place two equal portions in a bowl, and add your scallion, red pepper, and spoon of kimchi on top. Add some extra sesame seeds here if you wish. Enjoy!
