Spicy Tomato Tofu/Tempeh

Time: 30 minutes 

This is a super simple (literally the easiest) way to make some flavourful baked tofu/tempeh. It’s really delicious in a sandwich for lunch which I’ve often whipped up quickly at lunchtime, or alongside some veg and sweet potatoes for dinner.

Ingredients: 

 

  • 280g of firm tofu / 200g of tempeh 

  • A teaspoon of sesame oil 

  • 1 tablespoon of tomato puree 

  • 1 teaspoon of harissa paste 

  • 2 teaspoons of tamari 

  • Sprinkle of nutritional yeast (optional) 

 

Cooking Steps: 

 

  1. Pre-heat the oven to 200C.  

  2. Slice your tofu or tempeh into about 1 cm thick slices. 

  3. Mix your oil, puree, harissa paste, tamari and nutritional yeast in a bowl. 

  4. Take each slice of tofu/tempeh and coat it in the sauce in the bowl on both sides. 

  5. Lay each piece of coated tofu/tempeh on a baking tray with parchment paper. 

  6. Place in the oven for around 25 minutes, checking on them halfway and flipping them over to crisp both sides.
