One Tray Mushroom Sandwich

Can we all agree that mushrooms are just the best? This is coming from someone that was never a huge mushroom fan until recent years… now I’m obsessed! They have such good texture and are such an excellent flavour driver – the perfect meat substitute. This recipe revolves around portobello mushrooms. I wanted to create something that replicates a ‘Steak and Onion’ sandwich, but veganised and healthy! It can all be cooked in one tray in 20 minutes so it’s super quick. I served it here on a crusty baguette which was so yummy and I’d really recommend it! But it would also work great in a sandwich or even served on a salad.
Ingredients:
Mushrooms, Pepper, Onion
4 portobello mushrooms
1 pepper
3 scallions
Marinade
6 tablespoons of balsamic vinegar
3 tablespoons of tamari
2 garlic cloves
1 tablespoon of dried mixed herbs
2 tablespoons of olive oil
1 tablespoon of tomato puree or paste
Pinch of salt and black pepper
Cooking Steps:
Set your oven to 190C.
Wash and dry your mushrooms, pepper, and scallions. Slice your pepper into strips and slice your scallions into small pieces.
To make the marinade, mix all the ingredients in a large bowl.
Get a baking tray ready with parchment paper, or a non-stick baking tray.
Place each mushroom into the marinade bowl and ensure it’s coated well. Once you’ve dipped each mushroom in the bowl, lay them out on the baking tray. Pour the remainder of the marinade on to the tray. Don’t worry if it feels like the mushrooms aren’t fully covered as they soak up the flavour while cooking. If you have time, leave your mushrooms to marinate for 30 minutes to an hour. If not, you can cook them right away.
Before placing them in the oven, add your diced pepper and scallions to the tray and scatter them around the tray. They will soak up the marinade on the tray so they don’t need any oil.
Cook for 20 minutes, and once removed leave to cool.
Slice your mushrooms in half and serve alongside the peppers, scallions, and marinade in a roll or sandwich. I spread some sundried tomato vegan pesto on the rolls and it was divine! Hummus would also work great, or whatever condiment you love. Enjoy!
