No-Bake Healthy Thumbprint Cookies

Serves: 10 cookies

Time: 15 minutes 

I really wasn’t sure what to expect when I tried blending all these ingredients together, but it worked out so well… These cookies are SO yum! They don’t require any baking and they’re made with just a few simple ingredients. The cookie base is super crunchy and moreish with the almonds, and the star of the show is the raspberry chia jam. You can find the recipe for that here. Store them in the fridge and they’re the perfect little afternoon snack to boost your energy!

Ingredients: 

 

Cookie Base 

  • 14 soft dates (if too hard – soften in boiling water for 5-7 minutes) 

  • 1 and ½ cups of gluten free oats (or standard oats) 

  • 1 and ½ cups of almonds 

  • 2 tablespoons of cacao powder 

  • 2 tablespoons of oat milk 

 

Raspberry Chia Jam 

  • 350g frozen raspberries 

  • 1.5 tablespoons of chia seeds 

  • 2 tablespoons of maple syrup 

 

Cooking Steps: 

 

  1. Make your raspberry chia jam and leave to cool. 

  2. Blend all of your ingredients for the cookie base in a food processor. It’s fine to leave the almonds not fully pulsed – it adds a good texture to the cookie base.  

  3. Once your cookie base is pulsed and ready to go, scoop out a handful and roll into a ball in your hand. Place on a baking tray, and using a teaspoon, gently press the centre to create a hollow in the centre of the ball. Using your hands, shape the edges of the cookie around the hollow to be smooth and the shape of a cookie. Spoon in a teaspoon of the raspberry chia jam. 

  4. Repeat the process for the other cookies. 

  5. Leave to set in the fridge for 1 hour. 

  6. Once ready, store in the fridge for a week and enjoy!
