Summer Grain Bowl

Time: 30 minutes 

I am obsessed with this kind of bowl, so much so I could happily eat it every evening! It’s perfect as a summer meal, as it doesn’t need to be served warm and is just as good cold. You can use any grain you want, I chose bulgur wheat for this one. Same with the veg, roast whatever veg you have to add to it and however much of it you want. Tofu makes for the perfect protein, and the sauce is really what ties it all together. I make this harissa tahini sauce on repeat!

Bowl Ingredients:

  • 280g teriyaki tofu (I used the ‘Tofoo’ Teriyaki flavoured one. If you have a plain tofu, marinate it with whatever you want, even simply pan fried in some tamari is delicious) 

  • 2 handfuls of kale, torn up and massaged with a drizzle of oil and lemon juice 

  • 2 handfuls of rocket 

  • 1 courgette 

  • 1 bell pepper 

  • 1 small head of broccoli 

  • 80g of bulgur wheat 

  • 70g canned lentils 

  • 40g peas 

  • 1 tablespoon of olive oil 

  • 1 teaspoon of harissa seasoning 

  • 1 teaspoon of garlic seasoning 

  • Mixed seeds 

  • 10-15 cashew nuts 

Sauce Ingredients:

  • 2.5 tablespoons of tahini 

  • 1 tablespoon of harissa paste/relish 

  • 1 teaspoon of maple syrup 

  • Juice of half a lemon 

  • 1 teaspoon of garlic granules 

  • 1-2 tablespoons of water to loosen it (judge this based off how thick you want it) 

Cooking Steps: 

  1. Pre-heat your oven to 200C and line a baking tray. 

  2. Chop your broccoli, pepper, and courgette and place on the baking tray with olive oil, harissa seasoning and garlic seasoning. Roast in the oven for around 20 minutes. 

  3. Chop your tofu into cubes and place on a lined baking tray. Cook in the oven for around 10 minutes. 

  4. Meanwhile, cook your bulgur wheat according to the packet instructions. Before it finishes cooking, add your peas to the pot for the final few minutes to cook. Drain and leave aside. 

  5. Now, in a bowl, mix all of the ingredients together for your tahini sauce. 

  6. Place your kale in each of your two serving bowls and massage with olive oil and lemon juice. Then add your rocket to the bowls. Next layer your grains, lentils, followed by your veg and your tofu in whatever order you want. Then add your mixed seeds and cashew nuts to the bowl. Finally, finish with a good drizzle of your tahini sauce in each bowl and enjoy!
