Speedy Noodle Stir Fry 

Serves: 2-3

Time: 15-20 minutes 

This is one for those evenings where you’re short on time but still want something healthy and yum! The noodles only take a couple of minutes to make, the sauce is super quick, and the veg is cooked in a short amount of time on the pan. Fuss-free and delicious!

Ingredients: 

  • 2 portions of your chosen noodles (I used brown rice noodles here) 

  • Broccoli (chopped small) 

  • 1 courgette (chopped small) 

  • 1 pepper (chopped small) 

  • 1 red onion (diced) 

  • 1 red chilli pepper (remove the seeds for less heat) 

  • 3 cloves of garlic (crushed or chopped finely) 

  • 200g of edamame beans  

  • 1 tablespoon of sesame oil 

  • Black sesame seeds (to top the dish – optional) 

  • Half a lime (optional) 

Sauce: 

  • 2 tablespoons of tamari 

  • 2 tablespoons of brown rice miso paste (sub for regular miso paste if you need to) 

  • 2 tablespoons of maple syrup 

  • 2 tablespoons of water 

  • A sprinkle of seaweed (optional) 

Cooking Steps: 

 

  1. Place a medium pan over a medium heat. 

  1.  Add your sesame oil, red onion, garlic, and chilli and cook for around 3 minutes. 

  2. Now add your chopped broccoli, pepper, and courgette to the pan. Cook this for about 10 minutes, or until veg has softened. 

  3. While this is cooking, prep your noodles according to the package instructions and set aside. 

  4. Make your sauce mixing all of the sauce ingredients above and set aside. 

  5. Once the veg has softened, reduce the heat slightly and add the edamame beans to the pan. Cook for about 1-2 minutes. 

  6. Now add your cooked noodles to the pan, along with the sauce and toss everything together until the sauce has coated all of the veg and noodles and everything is well mixed. 

  7. Serve with a quarter of a lime to squeeze on top, and a sprinkle of sesame seeds.
