Sweet Potato & Oyster Mushroom Burritos

I don’t know about you, but Mexican food is one of my absolute favourites! Sometimes you’re really craving a burrito, but you want to keep it healthy – and this is the perfect recipe. It’s so full of flavour, and really satisfying with the sweet potatoes and beans. The oyster mushrooms add the perfect meaty texture. It’s a great weekend comfort meal!
Ingredients:
Approximately 8 Oyster Mushrooms (shredded)
2-3 tablespoons of tamari
Packet of pre-cooked brown rice
1 large sweet potato (peeled and diced)
1 400g can of black beans (rinsed and drained)
2 teaspoons of ground cumin
1 teaspoon cayenne pepper
1 teaspoon of garlic powder
1 tablespoon of smoked paprika
2 medium peppers (sliced)
Drizzle of olive oil
Salt
1 large avocado
1 red onion (chopped)
Handful of baby tomatoes (chopped)
Juice of half a lemon
4 wholemeal tortillas/wraps
Cooking Steps:
Pre-heat your oven to 180C.
Prepare your mushrooms and vegetables by slicing and dicing them.
Place your sweet potatoes on a lined baking tray. Drizzle with olive oil and add a sprinkling of cumin, paprika, cayenne pepper, garlic powder, and a pinch of salt. Roast for 15 minutes.
Then take them out of the oven and place your peppers and can of black beans on the tray. Drizzle these with olive oil, and again add the cumin, paprika, cayenne, and garlic powder. Roast again for 15 minutes.
While these are cooking, mash your avocado. Add chopped red onion and diced tomatoes and mix it all in a bowl to make a chunky guacamole. Add the juice of half a lemon.
Finally, place a medium pan over a medium high heat with a drizzle of oil. Add your shredded oyster mushrooms. Let them cook for around 3 minutes. Then add your tamari and continue cooking until cooked through.
Add your wraps to the oven for a few minutes to soften them. Or add to a microwave for a few seconds.
Cook your microwave rice.
Assemble your guacamole, sweet potato, beans, peppers, and oyster mushrooms in the burrito. Add a big spoonful of brown rice, and roll up your burrito. Be careful to wrap tightly and enjoy!
