Raspberry Chia Jam
Serves: Makes one standard jar
Time: 15 minutes
I genuinely make this every single time the jar is running low… I eat a spoon of it on my porridge every morning and it’s amazing. I don’t sweeten mine with maple syrup, as I love the slight tartness of the raspberries as they are, but it’s equally as yum with a tablespoon or so of maple syrup added in also! It’s the perfect jam to accompany porridge, breads, desserts, and so much more and it’s the easiest thing in the world to make.
Ingredients:
350g frozen raspberries
1.5 tablespoons of chia seeds
2-4 tablespoons of maple syrup (optional)
Cooking Steps:
Place your frozen raspberries (and maple syrup if using) in a small pot over a low heat.
Let them soften for about 8-10 minutes, stirring frequently.
Once soft, mash them in the pot, and add the chia seeds.
Cook for around 5 minutes more and continue to stir the mix every few minutes.
Remove from the heat and leave the pot to cool. When cooling, the chia seeds will absorb the raspberry mixture and result in a jam like consistency.
Pour into a jar or container, and refrigerate. I keep mine in the fridge for 1-2 weeks and it’s perfect.
