Dark Chocolate & Peanut Butter Dates

I am absolutely OBSESSED with these dark chocolate peanut butter dates. They are the only sweet treat I crave and eat every day – I find them the perfect satisfying (& nourishing) sweet treat post-lunch or in the afternoon. I don’t think I will ever stop eating them and I can’t recommend them enough. MAKE THEM!
Ingredients:
Jumbo Medjool Dates (I made 15 here)
Good quality crunchy peanut butter (one with just peanuts & salt)
100g bar of good quality dark chocolate (I use 85%)
Cooking Steps:
Lay out aluminium foil on a work top, and use this as your base to make the dates (I find this most useful as the chocolate and dates don’t stick to it and are easily removed when they are set).
Slice your medjool dates in half and remove the stone.
Melt your dark chocolate in the microwave, making sure to only put it in for short bursts so as to not burn it.
Spoon in a heaped generous spoon of peanut butter into the middle of each date, and spoon over the melted dark chocolate.
Leave to set on the counter for an hour or two (If you have fridge or freezer space you can speed up the process). Once set, place in a container and keep refrigerated. Enjoy!
