BEST Ever Chocolate Chip Cookies

Serves: 10 cookies

Time: 15 minutes 

Stop what you are doing and make these cookies! Honestly, they are incredible. They taste like the best indulgent gooey and crispy chocolate cookies ever, but they contain minimal and healthy ingredients. The combination of the tahini and maple syrup is just perfect. They also take no time at all to whip up! They’re my favourite thing to bake and they leave the kitchen smelling divine. I could not recommend them more! Hope you enjoy.

Ingredients: 

 

  • 1 cup of almond flour  

  • ½ cup of tahini (the runny kind) 

  • 1/3 cup of maple syrup 

  • 1 teaspoon of vanilla extract 

  • Half a teaspoon of baking powder 

  • Dark chocolate – I use a thick bar and chop it finely with a knife into chunks. Use as much as you want! 

  

Cooking Steps: 

 

  1. Pre-heat the oven to 200C. 

  2. Mix your tahini, maple syrup and vanilla extract together in a mixing bowl. 

  3. Now add your almond flour and baking powder. Mix it all together. 

  4. Lastly, add your chocolate chunks to the mix. 

  5. Spoon out approximately a dessert spoon of cookie mixture on to a lined baking tray, and using your hands gently press down and form into a circle. The mixture is sticky so I recommend you use the spoon to scoop it onto a tray. 

  6. Here I made 10 small cookies which I baked for 10 minutes. If your cookies are slightly larger they may need 12 minutes. Make sure to keep an eye on them in the oven and when they start to brown, remove them. They will be soft when you take them out, so leave them to cool and firm up for 30 minutes on the baking tray. 

  7. Enjoy and try not to eat them all at once!
